Recipe of the Month - Mango Salsa

Ingredients:
3 large ripe mangos, diced
1 medium jalapeno pepper, stemmed, seeded and minced
⅔ cup red bell pepper, diced
⅓ cup red onion, diced
1 tablespoon cilantro, diced
2 tablespoons fresh lime juice
1 tablespoon olive oil

Mix ingredients together in a bowl.

Serve with whole-grain tortilla chips or as a topping for grilled fish or chicken or quesadillas.
